Number of Servings: 2

Ingredients

    1lb skinless chicken breast
    2 peeled sweet potatoes
    1 small orange
    3 tbsp brown sugar
    1 tbsp lite soy sauce
    1 tbsp pure clover honey
    1 tsp fresh thyme

Directions

Preheat oven to 400 degrees
Cut peeled sweet potatoes into large chunks
Place chicken breast in the middle of square glass baking dish
Surround chicken with sweet potato chunks
Cut orange in half and Squeeze 1 half over chicken and potato chunks
Sprinkle brown sugar, soy sauce, honey, and thyme over chicken and potato chunks
Squeeze the other orange half over everything
Place on center rack in oven
35 min into cooking flip chicken and potato chunks over so all sides marinate in juices equally
Make sure chicken is cooked thoroughly (oven times may vary)
Remove from oven and let sit for 10 min and then serve.
Makes 2 servings.

    I got almost 3 servings out of it. It was DELISH!! It would be great over some rice, but it was fantastic plain, as well. Good flavor combos! I will be making this more often, especially since it's perfect autumn food. Thanks for sharing!! - 9/16/10
