Need kids to eat veggies? Make these! They are so naturally sweet and my kids would request them every week. They are also elegant enough to serve at an adult dinner party as a side dish. Ingredients

    Ingredients:

    Snap peas, 2 cup
    Mushrooms, fresh, 12 medium
    Garlic, 3 cloves
    Olive Oil, 1 Tbls
    Chicken Broth, 1/4 cup

Directions

Bring water to a boil and add snap peas for just 3 minutes to blanch.
Cut mushrooms in half and then saute in olive oil for a few mintues until slightly brown. Add Snap peas and saute for about 2 mintues and then add chicken broth and garlic and cook on low until broth disappears. Salt and pepper to taste.

    This was terrific! I will need to cut down on the garlic though. While it was fine for us, my little ones thought it was spicy. They were able to eat and enjoy the peas, but the mushrooms were spicy to them. I will definitely make this again. - 4/17/12
