Ingredients

    1 C quinoa
    2 C water
    1/4 C olive oil
    juice from 2 limes
    1 tsp cumin
    1/2 tsp red pepper flakes
    1 can black beans, rinsed
    1 1/2 C cherry tomatoes,cut in half
    5 green onions, chopped
    1/4 C fresh cilantro, chopped
    salt and pepper to taste

Directions

Wash and rinse quinoa. Ina saucepan, bring quinoa and water to a boil. Reduce and simmer, cover and cook until all water is absorbed, about 10-15 minutes. Let cool.

In a small bowl, whisk oilve oil, lime juice, cumin and pepper flakes.

Combine cooled quinoa, tomatoes, beans, and onions in a large serving bowl.

Drizzle dressing over salad and toss in cilantro. Season with salt and pepper.

    I had this at someones house & loved it. They never gave me the recipe. Glad I found it here. I'll garnish with some avacado slices. I'm saving this & plan to make for company as my husband & son won't eat it. Thanks for sharing. - 8/6/10

    Loved this recipe! I did add some cucumber, a Haas avocado, more cumin and DAKs southwest seasoning which added to the already delicious meal! Adding the avocado adds approximately 50 calories per serving, but worth it to me! - 3/8/13

    Made this for some company because their daughter is a vegetarian. I liked the black bean with the cumin - nice combination. Next time I'll try adding the avocado, sounds like it would make it even better. - 8/1/19
