Ingredients

16 oz ground beef 93% Lean
6 oz torilla chips
6 oz Uncle Ben's Country Inn Mexican Fiesta Rice
1 can (10.75 oz) cream of mushroom soup
1 cup tomatoes, canned with green chilies
1 cup onions, chopped
1 package (12 tsp) taco seasoning mix (40% Less Sodium)
1 cup cheddar cheese, shredded
Directions
1. Preheat oven to 350 degrees.
2. Start Uncle Ben's Rice as directed on package.
3. Brown ground beef and drain thoroughly.
4. Chop onions.
5. Add onions to pan with ground beef and cook until clear.
6. Add one package of taco seasoning (40 % less sodium) mix to the ground beef and onions. Follow directions on package.
7. Mix Cream of Mushroom soup and 1 can of tomatoes and green chili peppers in medium bowl.
8. Add cooked rice to the ground beef mixture on stove. Mix in Cream of Mushroom soup and tomatoes.
9. Spread a layer of tortilla chips on the bottom of a 9x13" baking pan.
10. Spread half ground beef mixture on layer of chips.
11. Layer chips on top of beef mixture. Spread remaining half on top of chips.
12. Sprinkle cheddar cheese on top.
13. Cover, and bake for appx. 20 minutes, or until mixture is bubbling.

I absolutely love this recipe! I have made it over and over again for my family. I find it's a great comfort food without feeling sinful. I will mix it up sometimes when I make it, instead of ground beef I use ground chicken/turkey other times I used different low sod cream soups (e.g. chicken etc.) - 10/2/08

I am going to make this tonight for dinner...I am excited it looks very good..My whole house loves Mexican food.. I am going to use the original recipe except I did buy 98 percent fat free cream of mushroom soup and I couldnt find the mexican rice, so I bought spanish rice We will see Im excited! - 5/31/08

I plan on trying this but I am not real big on packaged 'mexican' foods. I will do the rice but instead of a package... I will use regular rice with a little tomato sauce to replace some of the cooking broth (I always use beef or chicken broth to make rice.) and sprinkle some cumin and chili powder. - 5/26/08

You can leave out the taco seasoning; Use chili powder, cayenne, and cumin to still get the taco flavor. I used to use taco seasoning all the time until I realized that cumin is what gives it's characteristic flavor; leave out the sodium, etc. of the taco seasoning and you won't miss it, I promise! - 5/26/08
