Introduction

Ingredients

    1/2 box jumbo shells
    1 cup fresh spinach
    1/3 cup fresh mushrooms
    1 tsp minced garlic
    2 tbsp extra virgin olive oil
    .5 cup cottage cheese (low fat)
    .5 cup ricotta cheese (low fat)
    .5 cup mozerella cheese (low fat) divided
    1/3 cup parmesean cheee (low fat)
    1 egg
    oregano, basil, parsley, garlic powder, salt and pepper (dry ingredients)

Directions

Preheat oven to 350- 375. Boil water and add jumbo shells, boil until al dente. Chop mushrooms and saute in oil with minced garlic for 5 minutes. Put mushrooms in a bowl, then use the same pan to wilt down spinach. While spinach is wilting, add the four cheeses, egg, and dry ingredients to a sauce pan on meduim low heat melt together. Drain off any water from spinach and chop up slightly. Add spinach and mushrooms to the cheese mixture. Drain shells and rinse with cold water. Place shells in a casserole dish or cake pan. Spoon cheese mixture into the shells, top with pasta sauce and sprinkle the remaining mozerella over the top and bake for 20-30 minutes. Serve with a side salad and enjoy! YUMMY!
