Very easy crock pot dish. Very easy crock pot dish.Number of Servings: 4
Ingredients

2 frozen, boneless, skinless chicken breasts
1 cup chicken broth
1 cup frozen corn
1 cup black beans, rinsed
1 cup white corn and black bean salsa
1/2 cup uncooked quinoa
Directions
Cut up frozen chicken breasts into chunks and put in the bottom of crock pot. Add quinoa, broth, corn, black beans and salsa. Set cooking time according to your crock pot.
You can also pre-make the quinoa with the broth. I put this on medium high and it was ready in less than 4 hours.
