Introduction

A spicy/sweet marinade with watermelon and jalapenos. It is wonderful with pork, especially grilled pork kebabs (see separate recipe) A spicy/sweet marinade with watermelon and jalapenos. It is wonderful with pork, especially grilled pork kebabs (see separate recipe)
Number of Servings: 32

Ingredients

    2 cups watermelon chunks
3 jalapenos (seeded or not, depending on desired heat)
    2 cups sugar

Directions

** This is a marinade - very little of the sugar will actually make it into the food - thus the large number of servings I calculated for this recipe.

Put watermelon and jalapenos into a blender and puree (seed jalapenos for less spicy marinade). Add sugar and blend for two minutes, until sugar is dissolved.

I make a very similar marinade. I lightly caramelize onion and garlic with the jalapeno. Deglaze the pan with a tiny splash of vinegar. Blend everything together with salt/pepper. Delicious!!! I let it marinate for 24hrs, and even boil/reduce it afterwards for a nice sauce. - 7/6/11

How long do you marinade your meat? Will this keep in the frig. if too much is made and not used? If yes, how long? - 6/30/10

I can only imagine that this does not taste good at all. Especially since I get sick when I smell/eat watermelon, and I sure as heck is not going to put fruit on my meat. Sorry but this one doesn't even get a star from me. - 6/30/10

I'll have to cut way back on the peppers for my family, but the smallest kick will still make this an interesting combo. Yum! - 4/3/09
