As a Brasilian, I grew up eating picadinho, a ground meat dish. This is a lighter version of picadinho, made with 94% ground turkey. I flavored it with mexican spices (cilantro, cumin, a dash of chilli powder and a pinch of cayenne).

Ingredients

    1 lb of 94% ground turkey
    1 TBSP of olive oil
    1 medium onion chopped
    1 TBSP of garlic minced
    1 TBSP of ketchup
    1 green bell pepper chopped
    1 red bell pepper chopped
    1 Tsp of cumin
    1/2 Tsp of chili powder
    1/2 Tsp of cayenne (or more if you like it hot)
    2 Scallions sliced thinly
    2 TBSP of fresh cilantro, chopped

Directions

Chop the onion and sweat it in olive oil, then add the garlic and cook for 2 minutes more.

Add the ground turkey and use a spoon to break it up and mix it well with the onion and garlic. Add the ketchup. Cook for about 10 minutes, stiring occasionaly, you want some of it to stick to the bottom of the pan to get some nice caramelization and flavor. Add the cumin, the chilli powder and the cayenne, mix it well.

Add the chopped peppers and cover, let it cook for about 3 minutes or until they soften.

Only add the the scallions and the cilantro about 2 minutes before serving.

Makes 7 half cup servings.

    This was a quick and easy dish to prepare. Paired with some leftover brown wholegrain rice, a tiny bit of shredded colby jack, and rolled in a low carb tortilla like a burrito. Also subbed a couple things in to suit my taste, and the recipe was quite forgiving. Hubby raved about it! - 8/3/10
