    1 tbsp olive oil
    1 cup chopped onion
    3/4 lb lean gr. beef
    1 tbsp chili powder
    1 1/2 tsp cumin
    2 1/2 cups milk
    1 can reduced sodium chicken broth
    1 can condensed cheddar cheese soup
    1 1/2 cup elbow pasta
    1 1/2 cup shredded sharp cheddar cheese


Heta 1 tbsp olive oil in a 5 qt. soup pot over med.-high heat; add 1 cup chopped onion and saute until trnaslucent. Crumble 3/4 cup lean gr. beef into pot and cook, stirring for 4 minutes or until no longer pink. Stir in 1 tbsp hot Mexican chili powder and 1 1/2 tsp ground cumin, cok, stirring 2 minutes. Add 2 1/2 cup milk and 1 (14.5) oz can reduced -sodium chicken broth, then stir in 1 (10 3/4 oz/ can condensed cheddar-cheese soup until dissolved; and simmer 3 minutes. Stir in 1 1/2 cup uncooked elbow pasta; continue to cook, covered, 5 minutes. Sti r in 1 1/2 cups shredded sharp cheddar cheese until melted and smooth. Remove from heat, let stand 5 minutes or until pasta is fully cooked. Ladle soup into bows and garnish with diced domato, tortilla, and minced chile.
