Introduction

Just messing around with some ingredients on hand, trying to make a healthier bread that would satisfy my craving for sweets at breakfast or snack time. Just messing around with some ingredients on hand, trying to make a healthier bread that would satisfy my craving for sweets at breakfast or snack time.
Number of Servings: 18

Ingredients

    2 Eggs
    1/2 cup sugar
    1.5 cups flour
    3 small over ripe bananas
    1/4 cup ground flax
    1/4 cup oat bran
    2 cups amish friendship batter
    1/2 cup slivered almonds
    1/2 tsp baking soda
    1 1/2 tsp baking powder
    1/2 tsp salt
    1/2 tsp vanilla extract
    1 tbl cinnamon or pumpkin pie spice

Directions

Mash bananas and combine with eggs and batter. Stir in dry ingredients and nuts. Batter should be lumpy, do not over mix.

Pour into 2 greased 4x9 bread pans and bake for 1 hour at 325 degrees until a toothpick inserted comes out clean.

Makes 18 1" thick slices.
