Introduction

This salad is a refreshing change from a typical green salad and makes a great meal on it's own. This salad is a refreshing change from a typical green salad and makes a great meal on it's own.
Number of Servings: 8

Ingredients

    5-6 red, ripe tomatoes, cut in eighths
    2 packages of fresh mozzarella cheese, diced into 1/2" pieces
    1 English cucumber, sliced thinly (optional)
    1 small red onion, sliced very thin
    1 small can sliced black olives (optional)
    4 Tblsp fresh basil leaves, chopped
    3 cloves minced garlic
    4-5 Tblsp balsamic vinegar
    1/4 Cup olive oil
    1 Tblsp dried italian seasoning or dried basil and oregano

Directions

In large bowl, combine tomatoes cut in eighths and diced mozzarella. Add onion, garlic, basil and dry herbs. Mix well, then drizzle with vinegar. Mix, then add olive oil. Serve immediately with crusty bread. About 8 servings.
