Introduction

This is the raw version of my DF/GF Spiced Butternut squash Soup. I used Avocado, Buckwheat and soaked flax instead of Tofutti Cream cheese, and Rice to thicken the mix. Buttercup squash is a bit more like Pumpkin and is hard so it was a bit of work to make. This is the raw version of my DF/GF Spiced Butternut squash Soup. Add to blender and puree until smooth - use the reserved soak water to smooth out the blend - this will make at least 10 cups so again you may have to blend in stages (i.e. half and half) and add water as needed to smooth and get the consistency you desire. You could also warm this for non-raw eaters and add a dollop of Sour cream.
