Introduction

This could almost be called a spinach tart, since it's loaded with the good green stuff! Add whichever vegetables are taking up space in your crisper drawer-- tomatoes or chopped olives would have been excellent additions to the Mediterranean themed tart that follows. Ingredients

    1 20 oz package fresh Spinach
    1/2 onion, diced
    6 cloves garlic, minced
    1.5 ounce feta cheese, crumbled
    2 large eggs
    3 egg whites
    1 ounce milk
    1/2 red bell pepper, diced
    lemon peel or lemon pepper seasoning to taste
    aleppo or red pepper flakes to taste

Directions

Turn on your broiler. Chop all your veggies and cook and drain your spinach. In an 8-10 inch non-stick skillet, saute the onions and garlic over medium-low until softened, about 3 minutes. Add the spices and the red pepper and continue to cook for another 2-3 minutes. Add your drained spinach and make sure your veggies are evenly distributed. Sprinkle about half the feta over the mix. In a small bowl, whisk together the eggs, egg whites, and dab of milk and then pour over the vegetable mix. Add the remaining feta and cover for about five minutes, or until the sides of the tart are firm and only a few "puddles" of raw egg remain on the top. Remove the lid and place under the broiler for about 2 more minutes or until lightly brown. Finishing off in the broiler is not necessary, though it tastes delicious this way! If you do want to skip this step (which, hey, I did this time around!) simply leave the lid on the pan until both the sides and the top are firm. Serve immediately, room temp, or cold.
