Introduction

Blackbeans and tomato concoction can be used alone as a side dish or mixed with other foods. For example, it's very good with chicken if you like meat. It's also good alone on a flatout mulitgrain wrap with cheddar cheese, lettuce and salsa. Blackbeans and tomato concoction can be used alone as a side dish or mixed with other foods. Ingredients

    1 can of no salt added diced tomatoes
    1 c. black beans
    4 tsp. fajita seasoning

Directions

Cook 1 c. of black beans (I bought a one pound bag because canned black beans have sodium and I didn't want any additional sodium).
After black beans are cooked (about an hour or so) add 1 can of no salt added diced tomatoes and 4 tsp. of fajita seasoning. Simmer on low for 10-15 minutes. Serve as a side or with another food.
