Light tasty Fresh mango salsa - especially tasty with broiled haddock! Light tasty Fresh mango salsa - especially tasty with broiled haddock!
Number of Servings: 4


    1 very large mango, chopped (basically 1 cup chopped mango)
    (or substitute 1 -10 oz frozen bag of chopped mango)
    1/2 medium onion, chopped
    1 large Red Bell Pepper, chopped
    2 tbls extra virgin olive oil
    3 tbls lemon (or Lime) juice


Chop the mango, onion, and pepper into small chunks, place all ingredients in bowl. Add olive oil and lemon juice and toss well. Cover and let set for 1-3 hrs to marinade so flavors meld. Stir/shake bowl occasionally to mix ingredients.

Makes approximately 2 cups of salsa (4 - 1/2 cup servings)
