Easy to make supper dish, add a salad and you've got a great meal. The calories can be cut in many ways, using non-fat, or low fat feta cheese, sour cream, yogurt. Easy to make supper dish, add a salad and you've got a great meal. The calories can be cut in many ways, using non-fat, or low fat feta cheese, sour cream, yogurt.

Ingredients

    2 chicken breasts
    1 1/4 cups prepared Trader Joe's Harvest Grain Blend (you can sub rice, pasta, or anything else you like.)
    1 tbsp sour cream
    1/3 cup plain low fat yogurt
    1/3 cup feta cheese
    1/3 cup marinated artichoke hearts
    4 sun dried tomatoes
    1 tbs lemon pepper
    1 tbs garlic, dried oregano, basil, and any other to taste

Directions

Cook Trader Joe's Harvest Grain Blend. Place 1 1/4 cups in a casserole dish.
Place chicken breasts on top.
Sprinkle with 1/2 of lemon pepper, put rest in mixing bowl
In mixing bowl put
rest of lemon pepper, and other seasonings
the rest of the ingredients, mix
put over chicken
Bake at 350 for 30-45 min (until meat thermometer shows 160-170)
Let sit 5 min while tossing a salad.
