Ingredients

1 lb. ground turkey (browned)
1 med. onion chopped
1 can pinto beans
1 can black beans
1 can sweet corn
1 can tomatoes & green chilis (rotel)
1 can diced chipotle tomatoes
1 quart low sodium chicken broth
1TBSP ground cumin
2TBSP ortega lower sodium taco seasoning
1tsp. garlic powder
1tsp. ground chili powder
1tsp. oregano flakes
Directions
Makes 8 2c. servings
In a crock pot or slow cooker,
1. add browned drained turkey, and diced onion.
2. Drain, rinse and add pinto beans, black beans, sweet corn and rotel tomatoes. DO NOT DRAIN CHIPOTLE TOMATOES.
3. Add the chipotle tomatoes with the liquid in the can.
4. Add the chicken broth.
5. Add all spices and stir well.
Cook on high 3- 4 hours. You could also cook on low for 6-8 hours. It doesn't really matter with this soup!
I add a teaspoon of minced fresh cilantro to my bowl when I eat it. This is spicy. If you don't like too much spice you can omit the chili powder.
Servings are 2 cups each.
You can use frozen corn and pre-cooked dry beans to reduce the sodium if needed.
