Ingredients
¼ small head green cabbage cut in thin strips (about 2 cups) or buy coleslaw ready cabbage
2 carrots, peeled and grated ( about 1 cup)
¼ cup raisins
¼ cup peanuts
½ cup yogurt, vanilla
1 Tablespoon orange juice
Directions
Combine cabbage, carrots, raisins and peanuts in mixing bowl. In small bowl, stir together yogurt and orange juice. Before serving, add yogurt mixture to cabbage and combine thoroughly.
I didn't have any peanuts (I have never seen them in coleslaw) so I substituted dried cranberries and added a little chopped onion. I didn't have plain yogurt so I used my mother's usual coleslaw dressing (Miracle Whip and a 1/4 tsp of lemon juice.) No sugar is needed.
