    1 cup almond flour
    2 large eggs
    1/4cp water, milk, or cream
    2 tablespoons extra virgin olive oil
    1/4 tsp. salt
    1 tsp. baking powder
    1 tsp sweetener
    dash of Cinnamon


Mix well and cook like regular pancakes. I use Pam to cook them in a skillet.

  • To answer the question of greekgirl42, if it hasnt been answered, which probably has happened by now - since greekgirl posted in 09 - you can find almond flour in some health food stores. you may also find it in the grocery store. it's not typically found w/other traditional flour bkng products, - 7/1/10

  • I used soy flour, but only because I had plenty to use up! I also used heavy cream, and needed to add some water, but the texture was sooo light, just what I needed for breakfast! - 10/21/09
