Ingredients

    5lbs potatoes
    Water to cover
    8TBS vegan butter
    salt and pepper to taste

Directions

peel potatoes
quater potatoes and place in pot with enough water to cover
bring to boil and boil until soft (about 20 mins)
drain most of water but leave about 1 cup
add vegan butter I use earth balance
and mash
