Ingredients

1 Tbs. whole wheat pastry flour
1 Tbs. unbleached white flour
1 tsp. sweet matcha powder (I use Rishi brand Sweet Matcha)
1/2 Tbs. unsweetened applesauce
1 Tbs. unsweetened vanilla almond milk
.5 Tbs. canned or homemade sweetened red bean paste
1/2 tsp. almond extract
1/2 tsp. vanilla extract
3-4 drops stevia
1/8 tsp. baking soda
1/8 tsp. baking powder
tiny pinch of sea salt
Directions
Mix dry ingredients well. Add wet, except red bean paste. Pour half the batter into cupcake liner or tiny cake tin. Drop ball of red bean paste in the center, fill the rest of the way. if making a flatter/wider style cake, can either mash the bean ball flat or do multiple smaller balls dropped into the batter.
Bake at 350 until toothpick inserted comes out clean.
Can frost with a vegan buttercream even more red beans.
