Ingredients

2 pieces Hormel Natural Choice Canadian Bacon
1 pat butter
2 large organic brown eggs
1/2 cup frozen organic broccoli florets, pre-cooked
2 tbsp 1% organic milk
1 slice Cabot 50% reduced fat cheese
2 tbsp grated parmesan cheese
Directions
Use a cast iron or other oven-proof (it's going under the broiler) skillet, heat canadian bacon slices on med-low heat. Whisk together eggs and milk, add salt and pepper to taste. Melt butter in skillet with bacon and add the egg mixture on medium heat. Pre-heat broiler to 450°F, adjusting rack if necessary. Top eggs with broccoli, small pieces of cheese slice and parmesan. Turn off stove and place skillet in the broiler.
Broil under flame for 2 minutes until cheese is melted and parmesan is lightly browned. Eat out of the pan, or fold it in half and tip it out onto a plate. Serves one. Enjoy!
