Introduction

Easy and delicious, this basic recipe can be modified by adding veggies and spices to suit individual tastes. Easy and delicious, this basic recipe can be modified by adding veggies and spices to suit individual tastes.

Ingredients

    1 lb venison sausage, cooked and drained (or any low-fat sauage)
    1 10oz package frozen spinach
    1 medium red onion, chopped
    1 46 oz bottle tomato juice, without salt added
    1 14.5 oz crushed tomatoes
    1 15 oz can Great Northern beans, rinsed and drained
    1 15 oz can black beans, rinsed and drained
    1 clove garlic, minced
    1/2 tsp ground cumin seed
    ground black pepper to taste

Directions

In large frying or saute pan, brown sauage and onion together, drain. Transfer cooked sausage to large saucepan or Dutch oven. Add ingredients to saucepan in order and heat on medium to low until heated through, about 30 to 40 minutes. (If tomatoes are acidic, cut with 1/2 tsp sugar.)
