Introduction

Ingredients

    *Whole Wheat Penne (dry), 14 oz (remove)
    Spinach, fresh, 3 cup (remove)
    Peppers, sweet, red, raw, sliced, .5 cup (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    Onions, raw, 1 cup, chopped (remove)
    Mushrooms, fresh, 1.5 cup, pieces or slices (remove)
    *Beans, Kidney beans dark red 3 serv can, 3 serving (remove)
    Feta Cheese, .25 cup, crumbled (remove)
    *Pompeian Extra Virgin Olive iol (1tbsp), 1 serving (remove)
    Garlic, 1 clove (remove)
    Oregano, ground, .5 tbsp (remove)
    Basil, 1 tbsp (remove)

Directions

Cook penne per box instructions.

Heat oil in pan, add garlic and onions. Saute 2 min. Add peppers , mushrooms and beans, saute another 2 mins. Turn off heat and add spinach, let sit, covered for one min (this will wilt the spinach). Add feta and stir all together unti melted. Serve over penne.

Top with grated parmesean if desired.
