Number of Servings: 4

Ingredients

    1 can garbanzo beans
    2 cups chopped cauliflower (or other veggies)
    1 cup sliced carrots
    1 medium onion sliced
    2 tsp olive oil
    1 pat butter
    1 tsp garlic
    2 tbs curry powder
    salt & pepper to taste


Directions

Heat the oil and butter over medium-high heat.
Add the onions and cook until soft. Add curry powder, garlic, and salt and pepper. Cook and stir for a couple of minutes. Add vegetables and broth. Cook approximately 5 minutes. Add garbanzos and cook until vegetables are soft. Serve over brown rice. Makes approximately four (4) 2 cup servings.
