Takes a little while but well worth the wait. Takes a little while but well worth the wait.
Number of Servings: 4


    1 1/2 C. dry, brown rice
    1/4 lb. asparagus, fresh
    1 c. carrots, sliced frozen
    1c.. celery chopped
    2 chicken breast
    1 sm. onion
    2 t. garlic powder
    1 t. thyme
    1 t. rosemary crushed
    1 t. Mrs. Dash, fiesta lime
    2 t. fresh ground pepper
    3 c. water 1 can cream chicken soup


Place water, chicken breast, thyme, rosemary,garlic,onion and Mrs. Dash in large sauce pan bring to a boil and cook until chicken is done.
Remove chicken and set aside. Put brown rice into broth, cover and set aside.
Remove bones and skin from chicken. Cut chicken into bite size pieces.
Add chicken, celery, cream of chicken soup, and fresh ground pepper to rice.
Place in bottom of olive oil sprayed casserole dish rice and chicken mixture and spread evenly. Place carrots on top evenly and then asparagus evenly on top of carrots. Cover and place in 350* oven for approximately 30-45 minute, until asparagus is pierces with fork.
