Yummy using millet instead of rice! Yummy using millet instead of rice!

    2/3 cup tapioca flour
    2/3 cup brown rice flour
    2/3 cup sorghum flour
    1 tsp xanthan gum
    1/2 tsp salt

    2 egg yolks
    2 egg whites
    1/2 cup sugar
    1 cup fresh blueberries
    1/2 cup applesauce (i use sweetened)
    3/4 cup soy silk lite
    1/4 canola oil

    3 TBSP brown rice flour
    2 TBSP GF oats
    2 tsp brown sugar
    2 tsp butter
    1/8 tsp cinnamon


Preheat oven to 375

in large bowl whisk dry ingredients

in seperate bowl whisk wet ingredients minus the egg whites and the blueberries.

whip egg whites

combine wet and dry bowls

fold in blueberries

fold in egg whites

spoon into muffin pan

combine steusel topping and sprinkle over muffins

bake for 18-25 minutes until toothpick comes out clean

cool muffins
(add optional orange glaze that is to die for!)
