    Morningstar Farms vegetarian chicken patties(4)
    1 Tbsp. extra-virgin olive oil
    1 cup steamed or cooked onions
    1 cup fat-free, less sodium vegetable broth
    1 Tbsp. fresh lemon juice
    3 Tbsp. chopped cilantro
    2 tsp. capers
    1 tsp. grated lemon rind
    1/8 tsp. black pepper


Place the vege chicken patties in a shallow dish. Cook in 350 degree oven for 10 minutes. Steam or microwave onions for 10 min. while vege chicken patties are cooking. In seperate microwaveable bowl, heat vegetable broth ,lemon juice, lemon rind, cilantro, and black pepper for 1.5 minutes. Add capers and oil , and cook for another 40 seconds. When vege chicken is done, spoon the onions on top of vege chicken patties, and dredge the broth mixture over all the patties. Cook for another 10 minutes in 350 degree oven until onions are slightly browned. Enjoy!
