    3 chicken breasts, cooked and either diced or shredded
    12 ounces penne pasta, cooked and drained
    1 can cream of chicken soup, Healthy Request or reduced fat
    1 cup light sour cream
    1 packet taco seasoning, reduced sodium
    1 (4 oz) can diced green chiles
    1 cup Mexicorn (corn with peppers, or regular corn, drained
    1 teaspoon red pepper flakes, optional (for extra heat)
    1 cup Mexican blend shredded cheese, divided


Preheat oven to 350 degrees. In a bowl combine soup, sour cream, taco seasoning and red pepper flake, stir well. Add green chiles, Mexicorn, chicken, and 1/2 cup cheese, stir to combine. Add pasta and coat well. Pour mixture into 9 x 13 inch baking dish or equivalent. Sprinkle remaining 1/2 cup cheese over top. Cover with foil and bake for 30 minutes. Let sit uncovered 5 minutes before serving. Serves 8.
