Number of Servings: 6


    1 tbsp olive oil
    6 oz chicken breast cut up into small pieces
    1/2 cup chopped onions
    1/2 cup chopped green peppers
    1/2 cup chopped red peppers
    4 whole wheat tortillas
    1 small jar of salsa
    2 cups mozzarella cheese
    16 oz can of diced tomatoes
    dried red peppers
    black pepper
    garlic powder


Heat up the olive oil in a skillet and saute' onions, red peppers and green peppers until soft. Add the chicken and stir until the chicken is completely cooked, but still soft. Add the crushed red peppers, black pepper and garlic powder to give the chicken mixture some flavor. Add 1/3 of the can of diced tomatoes and 1/2 cup of the mozzarella cheese and mix until the cheese is melted into the mix.

In a small pan layer the bottom with two of the tortilla shells and add the remainder of the can of diced tomatoes on top of the tortilla shells. Add the chicken fajita mixture on top of the tortilla shells and cover it completely with the chicken mixture. Place the other two tortilla shells on top of the chicken mixture and tuck it in to the sides of the pan so the tortilla shells are not sticking out. Pour the small jar of salsa on top of the casserole until it covers the top. Sprinkle the remainder of mozzarella cheese on top of the salsa.

Bake at 400 degrees or until the cheese is melted.
