    1 can cream of chicken soup, 98% fat free
    4 1/2 cups potatoes, diced
    8 oz. cheddar cheese, shredded
    1/2 cup skim milk
    1 - 8oz. fat free sour cream
    1 small onion, diced
    3 Tbsp margarine


Pre-heat oven 350 degrees. Grease casserole dish. In medium sauce pan melt butter over medium heat. Mix in soup, sour cream, salt and pepper. Stir constantly with whisk for 1 minute. Stir in milk, and all of cheese. Continue stirring until cheese is melted and creamy. Place potatoes and onions in casserole dish and top with cheese mixture. Bake covered for 1 hour. Remove from heat, stir and check for desired potato tenderness. Continue to cook in 30 minute increments until potatoes are as desired. Remove cover and cook additional 15 minutes. Remove from heat and let sit 15 minutes to thicken before serving.
