    1 can cannellini beans, drained
    10 cherry tomatoes, halved
    1 small onion, thinly sliced
    50 grams peeled cucumber
    1 garlic clove, chopped
    2 tbsp chopped fresh basil
    salt & pepper to taste


Rub chopped garlic round a roomy bowl and leave in bowl.
Add drained beans
Add onion slices, halved tomatoes, cucumber, basil and salt & pepper and gently mix together.
Taste and adjust seasoning if necessary.
This forms a basic bean salad.
Add mackerel, sardines, cooked pancetta to make a snack or serve as a side dish.
