Like a bowl of warm pumpkin pie for breakfast! Like a bowl of warm pumpkin pie for breakfast!
Number of Servings: 1


    1/3 c. rolled oats
    2 TBS pumpkin puree
    1 dried apricot, soaked
    cinnamon, ginger and nutmeg to taste
    1 tsp vanilla
    pinch sea salt (optional)


Cook oats in 2/3 c. water with a dash of salt.
While oats are cooking put apricot into a small amount of hot water, let soak.

When oats are cooked blend 2/3 of the oats with the pumpkin, spices, vanilla and soaked apricot (ripped into chunks) in a small food processor or similar. Blend until apricot is cut up and pumpkin is well integrated.

Put in a bowl an add the unblended oats for texture. If your pumpkin cooled down the oats too much, heat in the micro for a short time until hot. Eat! So tasty and no processed sugar needed. The apricot does a great job sweetening things up.
