Number of Servings: 3


    1 Egg - Split egg white into a separate bowl to whisk to stiff peaks and egg yolk in another bowl.
    1/2 cup Cottage Cheese - non-fat or low fat
    1/2 cup milk
    1 tsp salt
    1 tsp Baking Powder
    1 tsp Good Vanilla Extract
    Mix the above together.
    Add in the:
    .25 cup All Purpose Flour
    .25 cup Wheat Flour
    .5 cup oatmeal (toast ahead of time for extra flavor)
    Mix the above together.
    Fold in the egg whites.


Once all ingrediants are mixed together heat your skillet or flat top.

Makes 9 pancakes 1/4 cups of batter.
Typically eat three with an egg or fresh strawberries cut on top.
