Introduction
I love taco salads for the crispy bowl and all the lettuce and cheese but I also love chicken fajitas with the peppers, onions and smoky flavor so I combined it all for a much lower calorie and still very tasty alternative! Ingredients

1 La Tortilla Factory - Smart & Delicious Low Carb High Fiber Large Whole Wheat Tortilla
3 ozs chicken breast, cut in 1/2" strips
1 cup sweet red pepper, sliced
1/2 cup onion, sliced
1/4t cayenne (or other seasonings to taste)
1 cup Baby Spring Mix Salad
1/2 cup cherry tomatoes
1/4 cup salsa
2T Fat Free Sour Cream
1/4 cup Kraft 2% Mexican Style Four Cheese Blend, Shredded
Directions
Preheat oven to 400. Loosely crumble sheet of aluminum foil to make a rough 3" ball. Place foil on cookie sheet sprayed with non stick cooking spray and drape tortilla over it. Spray tortilla with non stick cooking spray. Bake in oven until tortilla is ligthly brown and crispy. (bowl will form as tortilla drapes over foil in the oven.)
Heat skillet over medium heat. Spray with non stick spray and saute chicken, pepper and onion seasoned with cayenne (or to taste) until chicken is cooked through and peppers and onions are crisp-tender.
Place tortilla bowl on large plate or bowl. Fill with lettuce, chicken mixture, tomatoes, and cheese and top with salsa and sour cream to serve.
Eat and enjoy!
