    3/4 cup milk
    1/4 cup lemon juice
    1 cup all-purpose flour
    1 cup whole wheat flour
    6 tsp Sweet 'N Low
    1 tbsp baking powder
    1/2 tsp cinnamon, ground
    1/2 tsp salt
    2 egg whites
    1/4 cup apple sauce, unsweetened or all natural
    1 cup fresh or frozen blueberries

    2 tbsp flour
    2 tbsp brown sugar
    1/4 tsp cinnamon
    2 tbsp margarine


1. In a small bowl, mix milk and lemon juice; set aside.
2. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Set aside. Add egg whites and apple sauce to milk mixture, mix well. Gently stir into flour mixture just until moistened. Fold in blueberries.
3. In a small bowl, mix together 2 tablespoons flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs.
4. Fill greased or paper-lined muffin cups two-thirds full. Sprinkle streusel topping over unbaked muffins.
5. Bake at 400 F at 22-24 minutes or until center of muffin springs back when lightly touched.
