Introduction

A quick and easy salad. Serve it chilled over lettuce for a satisfying light lunch.

Normally I'm not one for just opening cans, but this works well and it's very quick.

Normally I'm not one for just opening cans, but this works well and it's very quick.

Ingredients

    1 15 oz can Red Kidney Beans - reduced salt - drained
    1 15 oz can Garbanzo Beans - reduced salt - drained
    1 15 oz can Black Beans - reduced salt - drained
    1 8.75 oz can whole kernel corn - no salt added - drained
    1 15 oz can diced salsa style tomatoes - reduced salt
    1 7 oz. can pink salmon - drained and flaked
    1 large Mexican green onion or 1 small onion and one scallion - chopped
    1 Tbsp. white wine vinegar
    2 Tbsp light mayonaise
    1 tsp chipotle powder (optional)

Directions

Combine all ingredients in a large bowl. Mix well. Chill for at least half an hour. Serve over fresh lettuce.
