Introduction

This dish is good alone, or it goes great over pasta, mashed cauliflower, or your favorite steamed vegetable. This dish is good alone, or it goes great over pasta, mashed cauliflower, or your favorite steamed vegetable.

Ingredients

    1.3 lb. Mild Italian Poultry Sausage (chicken/turkey), casings removed
    16 oz. Organic Roasted Red Pepper & Tomato soup, (low sodium)
    2/3 cup frozen corn
    1 bell pepper, diced (orange or red are best for sweetness)
    2 c. cabbage, chopped

    Preheat oven to 350 degrees. Cook sausage in skillet; chop into chunks as it cooks. While sausage is cooking, chop pepper. Transfer sausage to a deep glass baking dish. Add soup, pepper, corn, and cabbage and salt and pepper to taste. Bake covered for 30 minutes. Add cheddar, mix, and bake 20 minutes more, uncovered.
