    1 1/2 cup King Arthur White Whole Wheat Flour
    1 cup Quaker Old Fashion Oats
    1/4 cup Red Mill Flaxseed Meal
    1/2 cup Red Mill Oat Flour
    2/3 cup Splenda
    1tsp Baking Powder
    1tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cinnimon
    3 Small Apples
    2/3 cup Water
    2 Large Eggs
    1 tsp Vanilla Extract
    1/2 tsp Orange Extract
    1/2 cup Craisins - dried sweetened cranberries


Makes 12 muffins

Pre-heat oven to 350 degrees. Prepare non stick muffin pan with cooking spray.

Combine dry ingredients and mix in large mixing bowl. Combine eggs, 2 apples (cored and sliced), water, vanilla and orange extracts and blend in a blender or food processer. Add to dry ingredients and mix well. Stir in cranberries and remaining apple (cored and chopped into medium peices)

Fill 12 muffin tins and bake at 350 degrees for 30 minutes.
