    4 medium russet potatoes, baked
    1/2 medium onion, chopped
    3 stalks celery, chopped
    2 cloves garlic, minced
    1 c milk
    2 1/2 c chicken broth
    Salt & pepper to taste


Scrub and bake the potatoes. I bake mine in the microwave. Remove the potatoes from their skins and mash coarsely.

Spray soup pot with cooking spray. Saute the celery and onion until translucent; add the garlic for about 30 seconds. Add the milk & broth. I like thinner soup, so I increased the broth from the original 1 1/2 cups. Stir and bring to a boil. Add the mashed potatoes and mix in well. Add salt & pepper to taste. The recipe supposedly makes 6 servings, but we usually get 8 servings because of the extra broth.
