Number of Servings: 4


    1 medium spaghetti squash
    1/4 C butter
    1 clove garlic
    1 C velveeta cheese


Cut squash in half lengthwise. Add enough water in a pie tin or cookie sheet to cover the bottom. Lay squash cut side down in the water. Bake at 350 degrees for 45 minutes. Remove from oven and cool until easily handled. Once cool, scrape "noodles" from squash with a fork. Place strands in a microwave safe dish. Season with salt and pepper. Add butter, garlic and velveeta. Cook in microwave on high for about 3-5 minutes or until the cheese is melted. Mix well. Serve immediately.
