Ingredients

    4 medium red potatoes, peeled, diced, boiled, and cooled
    1/2 cup chopped parsley
    Juice of 2 lemons
    2 cloves of garlic, finely chopped
    1 tbsp. olive oil
    salt and pepper to taste

Directions

1. Combine all but potatoes in a bowl and whisk to combine.

2. Add potatoes and mix well.

3. Chill and serve.

    Maybe my lemons were extra big, but I knew right away that if I added the dressing as called for in the recipe it would be way to strong. I only ended up adding about 1/3 and it was fine. While not a 'I can't wait to have this again' recipe, I do see myself making it occasionally. - 9/6/10

    read the ingredients... 2 cloves of garlic, finely chopped

    i plan on making this.. sounds soo good! ;0) Good for BBQs and camping!
