Introduction

One of my fav summertime sides! Light & Refreshing.... One of my fav summertime sides! Light & Refreshing....

Ingredients

    1/2 red onion, large chop
    1 bell pepper, large chop
    1 cucumber, large chop
    1 tomato, large chop
    1/2 T EVOO
    1.5 T white balsamic vinegar
    Seasoning - salt & pepper to taste, or a seasoning mix such as Morton's Nature Seasoning or Cavender's Greek Seasoning

Directions

Cut veggies up - I like larger pieces so I just do about 1" chop. Add seasoning. Drizzle with EVOO and vinegar and toss well.

This keeps in the fridge really well for up to a week - the longer it sits the better it tastes.
