    1 lb. boneless skinless chicken
    1 15 oz. can of tomatoes
    1 15 oz. can of black beans or equivalent amount of cooked black beans
    2 medium onions
    3 cloves of garlic
    3 tbsp of salsa
    1 tbsp of olive oil
    seasoning to taste


Makes 4 servings

1. If you are using canned beans, rinse them well to remove as much salt as possible.

2. Dice 2 medium onions and finely chop 3 gloves of garlic.

3. Cut chicken into even, small pieces (I cut it into 1/2" x 2" x 1/4" or so) and cook in a no-stick pan, turning once. If the chicken releases liquid, drain and return to pan to brown slightly. Set chicken aside.

4. Add 1 tablespoon of olive oil and onions and garlic to pan. Cook on medium-high heat until onions are soft.

5. Add tomatoes, beans, chicken and salsa to pan. (I used salsa as a flavorful moist ingredient; you can try something else if there's no salsa on hand.)

6. Add seasoning to taste - I sprinkled some black pepper and a homemade version of Emeril's spice blend.

7. Stir and heat until warm.

Enjoy with the rest of your dinner - we ate it over fettuccine noodles.
