    4 ears of corn - cleaned, shucked and cooked
    1/2 cucumber (unpeeled)
    1/2 zucchini
    1 tomato
    1/2 red onion
    1/2 red or green bell pepper
    Italian salad dressing


In a large pot, boil the corn (cleaned and shucked) for about 10 - 15 minutes or until tender.

While corn is boiling, chop the cucumber, zucchini, tomato, red onion, and bell pepper into bite-sized pieces and place into bowl.

Once corn is done cooking, run pot with corn inside under cold water for about a minute. Once the corn is cool, cut the corn from the cob. Place corn in bowl with the other ingedients, add 1/4 cup of Italian dressing or oil and vinegar of your choice, and mix well. Chill until cool, and enjoy!

Makes approx. 16 cups, 2 cups per serving
