    1 cup sliced green onions
    1 Tbsp. Smart Balance Light
    1 1/2 cups fresh asparagus, diced
    3 cups Simply Shreds potatoes, thawed
    8 oz. Hillshire Farms Brown Sugar Ham, diced
    1 cup Sargento's Reduced Fat Mexican Cheese
    2 cups Eggbeaters
    1/2 cup 1% milk


Spray 9x13 pan with cooking spray. Heat oven to 350 F.

Saute green onions and asparagus in 1 Tbsp. Smart Balance light butter. Add garlic, salt and pepper to taste.

Mix potatoes, ham and onions/asparagus mixture in 9x13 pan. Blend egg substitute with milk and add to mixture in pan. Top with cheddar cheese.

Bake for 30-35 minutes.
