Easy, refreshing side dish salad. Easy, refreshing side dish salad.
Number of Servings: 6


    Cucumber, 1 large (about 3 cups)
    Onions, raw, .5 medium (2-1/2" dia)
    Cider Vinegar, .25 cup
    Granulated Sugar, 1.5 T.
    Celery seed, 1/8 tsp.
    Salt and pepper to taste


Peel cucumber, score with fork if desired. Cut in half lengthwise, then into thin slices. Cut onion into slices. In a covered dish, mix vinegar, sugar, and celery seed. Add cucumber and onion. Stir to coat. Sprinkle with salt and pepper to taste. Chill for 2 hours or up to 5 days, stiring occasionally.

Makes 6 1/2 cup servings.
