Introduction

i got this recipe from eating well and it says to use just the skins of the potato, but now i just use the whole potato tastes great. Ingredients

    3-5 large potatoes
    1 tsp olive oil
    1/2 tsp paprika
    1/4 tsp salt
    1/8 tsp cayenne pepper
    2 T freshly grated parmesan cheese

Directions

Preheat oven to 400F coat a baking sheet with cooking spray
with paring knife, remove skin and about 1/8 inch of the flesh from potatoes in long 1 to 2 inch wide strips. reserve peeled potatoes for another use. toss the potato skins with oil, paprike, salt and cayenne. place in a single layer on prepared baking sheet; sprinkle with parmesan.

bake until tender and golden 25 to 30 mins.
