Ingredients

    1 pound each of batata roots, sweet potatoes, rutabagas, turnips, carrots, & parsnips; cubed
    2 medium onions, cut in half & sliced
    2 tbsp olive oil
    2 tbsp garlic
    1 tsp each salt & garlic
    1/2 tsp each black & red peppers
    1 cup white wine
    3 cups apple cider, fresh

Directions

Stir apple cider & wine together in a pan & boil, reducing to 3/4 cup, about 30 minutes. Place cubed roots into roasting pan, coat with olive oil & spices, stirring to coat evenly. Add cider/wine reduction, stir to coat. Roast at 400 degrees, stirring occasionally until roots are tender & golden.
