A great recipe from Epicurious. Since it's a bit on the heavier side, I usually use this as a salad topper or eat it with cooked or grilled veggies, to keep things light. Ingredients

    # Nonstick vegetable oil spray
    1/2 cup Dijon mustard
    1/4 cup mayonnaise
    1 tablespoon chopped fresh tarragon
    1 tablespoon (packed) golden brown sugar
    2 pounds trimmed boneless pork loin, cut crosswise into 1/2-inch-thick slices, or thin boneless pork chops.

Directions

-Spray grill rack or pan with nonstick spray. Turn barbecue to medium high, or if preparing on stove-top, heat the pan.

-Whisk mustard, mayonnaise, tarragon, and brown sugar in medium bowl. Brush mustard sauce generously on both sides of pork cutlets.

-Grill pork until just cooked through and firm to touch, 2 to 3 minutes per side on the grill, or 4 to 5 minutes per side in pan.

-Take off grill or pan and let rest a minute or two. The serve with veggies or salad.
